The GV80’s optional pre-crash front seatbelts will tighten automatically in the event the vehicle detects an impending crash, improving protection against injury significantly. The Outback doesn’t offer pre-crash pretensioners.
Both the GV80 and Outback have child safety locks to prevent children from opening the rear doors. The GV80 has power child safety locks, allowing the driver to activate and deactivate them from the driver's seat and to know when they're engaged. The Outback’s child locks have to be individually engaged at each rear door with a manual switch. The driver can’t know the status of the locks without opening the doors and checking them.
The GV80 has a standard front seat center airbag, which deploys between the driver and front passenger, protecting them from injuries caused by striking each other in serious side impacts. The Outback doesn’t offer front seat center airbags.
The GV80 offers an optional Multi-Collision Brake, which automatically applies the brakes in the event of a crash to help prevent secondary collisions and prevent further injuries. The Outback doesn’t offer a post collision braking system: in the event of a collision that triggers the airbags, more collisions are possible without the protection of airbags that may have already deployed.
The GV80 Advanced/Prestige has a standard Surround View Monitor to allow the driver to see objects all around the vehicle on a screen. The Outback only offers a rear monitor and rear parking sensors that beep or flash a light. That doesn’t help with obstacles to the front or sides.
The GV80 has a standard blind spot warning system that uses sensors to alert the driver to objects in the vehicle’s blind spots where the side view mirrors don’t reveal them and moves the vehicle back into its lane. A system to reveal vehicles in the Outback’s blind spot costs extra.
To help make backing out of a parking space safer, the GV80 has standard Rear Cross-Traffic Collision-Avoidance Assist and automatically engage the brakes. Subaru charges extra for Rear Cross Traffic Alert on the Outback and its not available on the Base and the Outback’s Rear Cross Traffic Alert does not include automatic braking.
Both the GV80 and the Outback have standard driver and passenger frontal airbags, front side-impact airbags, driver knee airbags, side-impact head airbags, front and rear seatbelt pretensioners, height adjustable front shoulder belts, four-wheel antilock brakes, all wheel drive, traction control, electronic stability systems to prevent skidding, crash mitigating brakes, daytime running lights, lane departure warning systems and rearview cameras.
The Genesis GV80 weighs 560 to 1463 pounds more than the Subaru Outback. The NHTSA advises that heavier vehicles are much safer in collisions than their significantly lighter counterparts.
The National Highway Traffic Safety Administration does 35 MPH front crash tests on new vehicles. In this test, results indicate that the Genesis GV80 is safer than the Subaru Outback:

Side impacts caused 23% of all road fatalities in 2018, down from 29% in 2003, when the Insurance Institute for Highway Safety introduced its side barrier test. In order to continue improving vehicle safety, the IIHS has started using a more severe side impact test: 37 MPH (up from 31 MPH), with a 4180-pound barrier (up from 3300 pounds). The results of this newly developed test demonstrates that the Genesis GV80 is safer than the Outback:

Instrumented handling tests conducted by the National Highway Traffic Safety Administration and analysis of its dimensions indicate that the GV80 is 1.6% to 3% less likely to roll over than the Outback.
The Genesis GV80 (built after August 2023) has achieved the Insurance Institute for Highway Safety’s (IIHS) highest rating of “Top Safety Pick Plus” for the 2024 model year. This distinction is based on its exceptional performance in IIHS’ rigorous battery of safety tests. Specifically, it earned a “Good” rating in the latest, more stringent moderate overlap front crash test, a “Good” result in the updated side impact test, and an “Acceptable” score in the revised pedestrian crash prevention test. The Outback is only a standard “Top Safety Pick” for 2024.
