The Yukon (except SLE with front bench seat) has a standard front seat center airbag, which deploys between the driver and front passenger, protecting them from injuries caused by striking each other in serious side impacts. The Ascent doesn’t offer front seat center airbags.
The Yukon (except SLE) offers an optional HD Surround Vision to allow the driver to see objects all around the vehicle on a screen. The Ascent only offers a rear monitor and rear parking sensors that beep or flash a light. That doesn’t help with obstacles to the front or sides.
Both the Yukon and the Ascent have standard driver and passenger frontal airbags, front side-impact airbags, side-impact head airbags, front seatbelt pretensioners, height adjustable front shoulder belts, plastic fuel tanks, four-wheel antilock brakes, traction control, electronic stability systems to prevent skidding, crash mitigating brakes, daytime running lights, lane departure warning systems, rearview cameras, available all wheel drive, blind spot warning systems and rear cross-path warning.
The GMC Yukon weighs 887 to 1492 pounds more than the Subaru Ascent. The NHTSA advises that heavier vehicles are much safer in collisions than their significantly lighter counterparts.
The National Highway Traffic Safety Administration does 35 MPH front crash tests on new vehicles. In this test, results indicate that the GMC Yukon is safer than the Subaru Ascent:

The National Highway Traffic Safety Administration does side impact tests on new vehicles. In this test, which crashes the vehicle into a flat barrier at 38.5 MPH and into a post at 20 MPH, results indicate that the GMC Yukon is safer than the Subaru Ascent:
